BM is not "preferred by most painters".  Benjamin Moore is not the best and
neither is Sherwin Williams.  You don't buy BM paint and you don't buy SW
paint.  You only buy specific products.  It's ridiculous to use one product
from one company and another product from another company, under different
conditions no less, and declare one better.  Good BM paint is better than
poor SW paint.  Good SW paint is better than poor BM paint.  Both make top
quality products, and general statements are pointless and useless.

There is no comparison between "eggshell" and "latex".  That's like asking
what is better - white paint, or oil paint?  Eggshell is an amount of sheen,
while latex is simply water based paint.  The more shine a paint has, the
more it will show up flaws in the walls or the paint job, and the harder it
will be to touch up, but the easier it will be to clean.  The more flat a
paint is, the more it will hide flaws in the walls and paint job, and the
easier it will be to touch up, but the harder it will be to clean.  This has
nothing to do with "latex".

I would definitely use an eggshell or satin finish in any room where cleanup
or water will be an issue (kitchens, baths, kid's rooms).  I personally like
the look of flat paint everywhere, but that is personal preference.  Some
people prefer a bit of sheen.
